Salad used to not really get eaten a whole lot here at the BEST HAUS, but now I am realizing how important (and delicious!) salads are. I now crown salad the most important meal of the day!
Not only is it the most important meal(s), it is so easy to be creative and have fun when making salads. There are so many dressings that you could create… so many combinations of veggies, fruits, nuts, and seeds. The salad possibilities are endless!
So that being said, onto the salad and salad dressing that I am in love with currently. This salad was actually one of those accidental awesome creations, that came about by tossing a bunch of ingredients that we had on hand into a giant bowl, and topping it off with a tasty homemade dressing. Now I want to create this salad on purpose as much as possible!
The ingredients in the salad are: sunflower seed sprouts, spinach, avocado, radish, yellow and black tomatoes (from Jef’s coworker’s garden!), green onion, fresh basil, and sunflower seeds.
We dressed this in a Lemon Poppyseed Dressing:
- The juice from one large lemon
- 1 tablespoon agave nectar
- 2 teaspoons dijon mustard
- 1 tablespoon raw apple cider vinegar
- 6 tablespoons cold pressed extra virgin olive oil
- Poppyseeds! However many makes you happy.
So satisfying, so delicious, and so incredibly healthy! Salads are my new best friend. You know, my best friend that I’m going to gobble up a lot.

Jef was able to snag these adorable photos of Lucy sleeping the other day… she is so freaking cute! Sometimes my heart just wants to explode from all of the cuteness!
This photo would be even more heart-explodingly adorable if she had a bunny friend that she was snuggled up next to.
Yeah. Bunny friend! I have wanted one for a really long time now, and then my discovery of Rachel in Veganland has only magnified this bunny desire to the point where we have decided that we want to add a new family member to the BEST HAUS! We already have a name for her/him: Basil!
We want to adopt from a shelter, for sure. Lucy-cat was adopted from a shelter, and it makes me so happy to be able to give animals who are down and out another chance at a loving home and family.
