Jef had the fantastic idea to make a cashew cheese that was flavored with lime and chipotle.. and then we stuffed these sweet peppers with it. They tasted like jalapeño poppers… except for they were actually healthy! YUM! : )
Of course, we don’t have an exact recipe for these little popper-like-critters, but we can tell you what goes inside of them, so perhaps you can devise something similar and tasty!
Here is what we put in the chipotle lime cashew cheese:
- Raw cashews (soaked, drained, rinsed)
- Lime juice and zest
- Coconut aminos
- Chipotle powder
- Mystery hot pepper (a jalapeño like mystery pepper from our mystery hot pepper plant)
- Himalayan sea salt
- Filtered water
After making sure the cheese was super tasty, we assembled the sweet peppers. Off with their heads, and in with the cheese! We then transfered the stuffed peppers to dehydrator trays, and dehydrated at 115 degrees fahrenheit for about an hour. This helps to soften the peppers, but doesn’t compromise their nutritional integrity in the least bit.
They were good warm, fresh out of the dehydrator, and they were also good the next day fresh out of the fridge! Hooray for figuring out how to make raw jalapeño poppers!
