This was my midnight snack last night. I should have been sleeping, but looking at delicious food in recipe books and talking food with Mom made me hungry. Very hungry. I thought about eating the cat, but that would take too much work to make her tasty, so I turned to THE ORGANIC GARDEN HARVEST that was awaiting me in the fridge. Rainbow kale, cherry tomatoes, and zucchini, oh my! Savory midnight snack, ACTIVATE!
What compromised this tasty dish, you ask? Rainbow kale, zucchini, cherry tomatoes, all sauteed in a bit of olive oil with some minced garlic and of course some sea salt and cracked black pepper. And that’s it! Really!
It’s pretty simple, but don’t let it’s simplicity fool you… the heartiness of the kale… the tangy tomatoes… the luscious zucchini… it’s FRIGGIN DELICIOUS! My mouth waters for more…
Plus knowing that most of the ingredients that came from this dish were from my garden is a pretty freaking fantastic feeling. I have been wanting to grow my own food for a few years now, so I’m happy that this year was THE YEAR that I finally started doing this amazing thing called gardening (micro-farming!). Now I must, I MUST, do this every year from here on out!
I also wanted to use this post as a way to give a shout out and say thank you to my fellow vegan bloggers and vegans. It’s easy for me to feel alone sometimes, like I am too passionate for the little world that I occupy. But coming online to my wordpress and connecting with other fellow vegans helps me to feel like I’m not the only crazy human being who cares about the well being of animals, the earth, humans, and my own health. Okay.. so at least I have Jef and Shannon and my sister Amylia to share in my vegan-ness, but sometimes it doesn’t feel like it’s enough, especially considering the amount of people in the world who don’t seem to be concerned at all with the things that I feel such intense passion for.
So yeah, thank you for being you and for sharing your passion with the world. It makes my world feel a whole lot bigger, and it makes the world a whole lot brighter and lovelier. And although I don’t know any of you fantastic people personally (yet!), or really know much about you at all (besides the fact that you are vegan and you love food like I do), I feel connected to you because I know that it takes a certain type of human being to be vegan. And those certain types of human beings are on my team.
I also love how connected the blogging world has made me feel 🙂 So thank YOU!

I can completely relate, I feel like I’m crazy for my zealousness over PlantBased cooking sometimes…then I get online and read blogs written by people like you. It’s good for us to all have each other 🙂
