To go along with Vegan Sushi Night, we made a simple seaweed salad out of wakame, cucumber, sesame seeds, tamari, toasted seasame oil, mirin, and rice vinegar.
Wakame is high in calcium and iron. Consuming wakame is an excellent way for vegans to get their Eicosapentaenoic acid, or EPA, an Omega-3 Fatty Acid, that is usually found in oily fish or fish oil. But where do these fish get their EPAs, you ask? Just how cows get their calcium and iron… by obtaining it through the plant foods that they eat!
Fish eat algae, and algae give their magical nutrients to fish, and then we are told to eat fish to get our hands on these magical nutrients. But here at The Bear and The Blackberry, we cut out the middle-men (fish!) and go direct to the source, seaweed! YUM!
The fish and the over-fished oceans will thank you : )
