ACTIVATE PANCATION! Every now and then we indulge ourselves with flapjacks for breakfast. This time, we had some fun and experimented with a new type of flour: Teff Flour!
Teff is an ancient grain that is high in protein, iron, and calcium, among many vitamins and minerals. We found a recipe for Teff Banana Pancakes in our handy dandy cookbook Going Wild In The Kitchen by Leslie Cerier. We added fresh strawberries and toasted coconut flakes to the pancakes and they were fan-freaking-tastic! Especially topped with Earth Balance and Agave Syrup…or Maple Syrup… mmmmmmm!
Teff is a great grain for women, since it is ridiculously high in iron and calcium. I (Ali) especially recommend teff during “lady-time” when we need these nutrients the most. Who needs painkillers when you have steamy hot PANCAKES!?! Not I, captain! PS, it is good for “man-time” too. (man time? man time..)
