For breakfast we made some Blackberry Pancakes with Orange Zest! I found a basic pancake recipe in one of my cookbooks, and then made a lot of changes so that the recipe looked like this:
- 1 cup of whole wheat pastry flour
- 1 teaspoon baking powder
- a pinch of sea salt
- 1 1/4 cup of unsweetened soy milk
- 2 tablespoons flax seeds
- 2 tablespoons water
- 1 1/4 teaspoon pure vanilla extract
- 1 teaspoon canola oil
- Zest from one orange
- Juice from one quarter of an orange
- Frozen blackberries
We first combined the flax seeds with the water, to use as an egg replacer. Then we combined this with everything but the blackberries in a bowl, whisking until everything was well integrated. ACTIVATE PANCATION! We heated up our skillet with some coconut oil and ladled in the pancake batter.Then we put 3-4 frozen blackberries on top of the grilling pancake, flipping after a couple of minutes. This batter makes about four or five medium sized pancakes.
I ate my pancakes with agave syrup and Jef had his with real one-hundred-percent-not-fake maple syrup! YUM! The breakfast of champions!
