What started off as an accident was later transformed into a delicious dinner. I really wanted some spicy sweet potatoes for lunch, but I accidently cooked them too long and made them too mashed-potato like. To make the sweet potatoes, I cut them into small cubes, and placed them in our big cast iron pan along with some no-chicken broth, salt, cayenne pepper, and garlic powder, and then covered to cook. Initially, I had only planned on covering them for a couple of minutes, but I got sucked into this book I just started reading (Hope’s Edge) and sort of forgot about them. Whoops! When the sound of sizzling water brought me back to the reality of food-time, it was too late, they were too soft. Their flavor was really good, just not the consistency I was going for, so I decided to save the rest for dinner.
I have been wanting to make a veggie burger with green lentils and black rice lately, and I thought that the sweet potatoes would go nicely in the patty mix. I made the black beans and green lentils shortly after messing up the potatoes, so that they would be ready for burger preparation later on. When dinner time began calling in our stomachs a few hours later, we threw the black beans, lentils, and sweet potatoes in the food processor along with some fresh garlic, no-chicken broth, flax meal, cumin, cayenne, salt, black pepper, oregano, onion powder, paprika, and olive oil. After letting the food processor attack this hefty job, we discovered that we needed to add some flour to give it some holding power.
Now, time for frying! We heated up the famous cast iron skillet with some olive oil, and then formed a patty, dipping it in some panko bread crumbs for fun (and so the patties didn’t stick to the skillet), cooking until they were well browned on each side.
We toasted the buns and smeared some dijon mustard on them, transferring our delicious patties to their new homes. We put tomato, onion, cucumber, lettuce, and avocado on top, and then scarfed them down! They were pretty damn good, especially for a first time try at veggie burgers. I’m excited that we will have enough left at least for a couple of more meals… yum!
