No, this is not a traditional merrymas day breakfast, but while Ali was hard at work on Christmas morning, I rolled outta bed and crafted this tasty meal for myself. Also, it is traditional xmas colors! (more or less)
To get things started, I slice potatoes UBER thin. as thin as possible; borderline-potato-chip-thin. Lay down some olive oil, get them taters fryin! Cut up onion and garlic, when the potatoes are starting to look a bit cooked, add in the goods. when the potatoes are crispy (or however you prefer them) add some soy chorizo. I kept the potato/onion/garlic mix on one side of the pan and heated the soyrizo on the other side, so as not to contaminate colors. If it is all nice and hot, it is all nice and ready. I added spinach and avocado for some more color (also: avocado is rad, and has some good natural fats). All in all, a tasty, filling, colorful breakfast for when you have a few extra minutes.
