I woke up this morning with a craving to create (and eat) a hearty and healthy breakfast. I wanted to use kale, which I feel like I have become addicted to. But don’t fret, it’s a healthy addiction! Rich in calcium, iron, and tons of other vitamins, minerals and phytochemicals, kale is a super food that is super delicious. I decided it would be best in a tofu scramble with garlic, onions, mushrooms, and tomatoes.
For the scramble, I sauteed some diced onions and garlic in some coconut oil over medium-high heat for a couple of minutes to release their flavor. Then I added some kale (I love the dark purple kale that I find at the Sacramento Foods Co-op) and cremini mushrooms and covered the skillet to help steam and shrink the kale. After a few minutes of steaming, I added finely chopped medium-soft tofu as well as nutritional yeast, turmeric, paprika, cayenne, chilli powder, dried basil, salt and pepper. After sauteing for a few minutes I added in some chopped tomatoes.
I served the scramble with pan fried sweet potatoes, which I first boiled to soften and reduce their cooking time. I then chopped the potatoes into medium sized pieces and pan fried them in coconut oil, seasoning with dried oregano, garlic powder, salt, and pepper. Sweet potatoes are another super food, which are high in fiber, calcium, magnesium, potassium, and vitamin C (among many other things). Not only does their consumption promote overall health, but happiness too! Sweet potatoes are high in carbohydrates that just so happen to initiate the production of the brain chemical serotonin, which helps ward off depression.
This breakfast was FUGGIN GOOD. ‘Nuf said!
