
This delicious hunk of a bagelwich was dinner the other night.
It’s composed of a toasted sprouted whole wheat sesame bagel, lavished with a garlic cashew cheese spread, and then filled with the tasty mixture of kale, cremini mushrooms, and red onion that I sauteed in olive oil and simply seasoned with black pepper and sea salt.
The cheese spread was made up of cashews, garlic, nutritional yeast, olive oil and sea salt.
I’m in love, to say the least.

And here sits a very contented Lucy cat! She likes to bask in the sunshine, watching birds and squirrels on her pillow perch.

I think Lucy cat is pretty freaking adorable as well! I just realized tonight that she is a whopping 9 1/2 years old! You would have never guessed with the way she runs around the house and how playful she is. I think she has at least another ten years in her!
