And mine!!! YUMMO, I have been thinking of making some sort of dhal curry like this for ages. Do you just throw everything in the pot together??
First I cooked the lentils, and then I sauteed the cauliflower with some oil in my favorite cast iron pan. Once they were nice and cooked, I added them to the lentils and threw in a bunch of spices, testing to make sure it was perfect. Then I added in the frozen peas and fresh spinach. Yum!
This is amazing with garlic naan.. if you can get your paws on a vegan version! Our coop has a vegan whole wheat garlic naan that is spectacular!
