
We love Mac n’ Green!
We have been eating this tasty-cheesy-creamy-greeny pasta for the past couple of nights, and mmmm mmmmm it’s good! Back in my not-so-hardcore vegetarian days, I loved making macaroni and cheese from scratch and then adding steamed broccoli to the mix.
To recreate my fondness for creamy-cheesy-greeny that is also hardcore vegan, I made a sauce out of a bunch of tasty ingredients… like: celery, onion, garlic, broccoli, spinach, pumpkin seeds, sunflower seeds, nutritional yeast, extra virgin olive oil, tamari, sea salt, and black pepper. We boiled some quinoa macaroni, tossed it with some deliciously buttery earth balance (my weakness!), and stirred in the radical green sauce.
And it ’twas magical.
YES!! I love greens in my Mac N Cheeze too! Delish!
So funny! Mac and cheez (with broccoli) is on my menu this week! I’m liking the green look, however – might have to get crazy in the kitchen!
Earth Balance makes me weak in the knees. This dish totally justifies a bit of usage
Sometimes a recipe just needs a little extra buttery goodness that only earth balance seems to be able to provide!
For reals. that stuff is delicious. I try to avoid it, but man sometimes you just gotta have it.
That looks soooo good… I thought it was pesto! Which makes me think a little basil in there would not be amiss… But everything else in there sounds amazing too! : )
Oooh basil would be really good, and would intensify the green, even!
Can I have a rough guide as to ratios, please? I need this in my life.
