
We had this for dinner the other night. I want it again. And again and again!
In this Walnut Pesto there are the following ingredients: walnuts, basil, garlic, lemon juice, nutritional yeast, extra virgin olive oil, himalayan sea salt, and cracked black pepper. So good!
We pan fried the extra firm tofu in some canola oil until it was nice and golden brown, and then transferred it to a bowl with the walnut pesto and tossed it around together until the two were happily married.
And then we devoured them.
After somehow managing to get a picture in first… ; )

I’ve never made a walnut-based pesto! Scandalous.
Super scandalous indeed… and thrifty! Pine nuts are muey expensive, so I like to utilize whatever I’ve got on hand! Pumpkin seed pesto is pretty darn good, too!
That’s a very good point.
I love pesto, and I love tofu, but I’ve never even thought about combining them. A great idea that I’m going to have to try, and soon!
That looks great! I often make my pesto with walnuts, too. Pistachios are a favorite pick, but definitely a splurge for special occasions.
